鲤鱼两面的皮内各有一条似白线的筋,在烹制前要把它抽出。一是因为它腥味重,二是它属强发性物,俗称"发物"。 抽筋时,应在鱼的一边靠鳃后处和离尾部约1寸的地方各横切一刀至脊骨为止。再用刀从尾向头平拍,使鳃后刀口内的筋头冒出,用手指尖捏住筋头一拉便抽出了筋。
