腌制时间过长,就会产生亚硝酸盐。人体吸收过量亚硝酸盐,会影响红细胞的运作,令到血液不能运送氧气,口唇、指尖会变成蓝色,即俗称的"蓝血病",严重会令脑部缺氧,甚至死亡。而且腌制时间过长的食物很可能已经变质,产生黄曲霉毒素。它是一种剧毒物质,毒性比KCN大10倍,比砒霜大68倍,仅次肉毒霉素,是目前已知霉菌中毒性最强的。它的毒害作用,无论对任何动物,主要变化是肝脏,呈急性肝炎、出血性坏死、肝细胞脂肪变性和胆管增生。脾脏和胰脏也有轻度的病变。
