面团温度在24~27℃为最佳的面团膨胀温度。如果面团温度刚好在24℃左右,那么第一次膨胀温度所需的时间大概是1~1.5小时。而对于酵母使用量低于平均值的面团,如法棍,可能需要3小时才可膨胀起来。缓慢的膨胀,能使面包形成更大的孔洞。而发酵好的面团标准温度为28~30℃。若存在太大差异,就需要进行调整。面团标准湿度为70~75%,要始终保持面团相对湿润的状态。
