松露煲汤用什么配料

松露煲汤配料:大约8克重的黑松露1粒、50克湿花胶,再配以100克老鸡肉、50克赤肉。

做法:

1、”先把花胶洗干净,用冷水浸过夜,切忌沾到肥油;

2、将老鸡肉跟赤肉放进沸水里煮一会,取出泡冷水,也就是所谓的“过冷河”;

3、用食用刷把松露表皮刷干净,再磨成茸状,备用;

4、将所备用的花胶、老鸡肉、赤肉放进蒸炉炖4小时,花胶为胶质极重之物,容易粘底,煲时要经常察看,以防烧焦;

5、将松露茸放入炖好的花胶汤中,加入调味料即可上碟。
