如果是蛋黄黑了,原因是因为蛋白质含有较多的蛋氨酸,经过长时间加热后,蛋氨酸能分解出硫化物,它与蛋黄中铁发生反应,在蛋黄的周围形成绿色或灰绿色的硫化铁,颜色逐渐变深。

如果是蛋清的话,应该是是鸡蛋和锅,尤其是铁锅或者相应的菜部分起了一点反应,不会影响健康。
