鸭货的卤制方法

1、白条鸭洗净、沥干。

2、锅中倒入清水,放入白条鸭、加入姜葱、桂皮、大料、料酒、酱油、白糖、大火烧开,改小火焖煮,待煮到鸭肉熟烂时,转中火,再加入白糖焖煮。并不断用勺子将汤汁舀起来淋在鸭肉上,使之鸭肉更容易入味,待汤汁浓稠挂满鸭身时冷却。

3、待卤好的鸭子冷后,改刀装盘,再将原来剩余的卤鸭子汤汁淋在鸭身上即可了。
