八角仔鸡煲

1、主料:嫩仔鸡1只(约重750克)。

2、辅料:生菜叶100克,料头花(胡萝卜花刀片)2克,香菜叶5克。

3、调料:八角3朵,葱段20克,姜片15克,绍酒10克,糖色10克,酱油10克,精盐3克,胡椒粉1克,味精5克,白糖15克,湿淀粉5克,香油5克,鲜汤1500克,花生油适量。

4、将鸡从背劈开,去大梁骨,去内脏,切去脚、翅尖,洗净。将鸡、大梁骨、脚、翅尖飞水,下入漏勺沥尽水,将鸡身搌干水分,均匀抹上一层糖色。将生菜叶洗净。

5、将锅炙好,下入花生油烧至七成热,下入鸡炸至色橘红,下入漏勺沥油。锅迅速回火上,下入八角,以余油稍炸,下入葱段、姜片爆香,烹入绍酒,下入鸡脚、大梁骨、翅尖,盖上竹箅,下入鲜汤,将鸡脯朝下码在竹箅上,调入酱油、精盐、胡椒粉、白糖烧开,盖上盖,改用文火炆1小时,将中号煲仔(沙锅)内垫入生菜叶,将炆好的鸡脯朝上,码入煲中生菜叶上。将锅中汁打去葱段、姜片、八角,下入料头花,调入味精,将汁收浓,以湿淀粉、香油勾稀芡,浇在鸡上。将煲仔上煲仔炉烧开,撒入生菜叶,盖上盖上席。
