正宗广东馄饨馅的做法和配方

1、主料:碎猪肉、碎牛肉共约150克、馄饨皮18张、青葱碎2棵量、蒜茸1粒量、生粉2茶匙、蘑菇约80克、蚝油2茶匙、麻油1/2茶匙、蛋白1只量、生油、牛油各适量。

2、调味料:老抽1汤匙、辣椒汁2汤匙。

3、以慢火融化牛油,爆香葱粒和蒜茸,取出加入碎肉,切碎的蘑菇、蚝油、麻油及生粉,拌匀成馅料。

4、把馅料均匀地分成十八份,每份包在一块馄饨皮内、在馄饨皮四周涂上蛋白,然后对角摺合成馄饨。

5、一浅碟内涂上少许生油,放上馄饨,隔沸水蒸十分钟至馄饨熟透,蘸调味料供食。
