芝麻香型白酒酿造工艺 :采用人工培养的白曲、生香酵母及细菌麸曲加少量高温大曲为糖化发酵剂,经发酵产酒,贮存勾兑而成。芝麻香型白酒是酱香型的一个分支,它集合了酱香型高温堆积、高温发酵、高温流酒的工艺特点。芝麻香型白酒是传统工艺和有益微生物纯培养相结合的改良工艺。以高粱、小麦、麸皮为原料,合理配料,泥底砖窖,混蒸混烧,高温大曲、中温大曲和麸曲混合使用,外加白曲、酵母、细菌强化发酵,高温堆积,高温发酵,长期贮存,分型勾调。
