卤水分为两大类,即红卤和白卤。红卤、白卤味型基本相同,属复合味型,味咸鲜,具有浓郁的五香味。

1、红卤是加糖色卤制的食品,呈金黄色。如咖啡色,如卤牛肉,金黄色,如卤肥肠等。

2、白卤是不加糖色卤制食品,呈无色或者本色。如白卤鸡,白卤牛肚猪肚等。
