1、煮蛋经常出现蛋壳破裂,蛋白溢出的现象,这是由于突然加热,蛋壳内膨胀的空气不能迅速透过蛋壳大端的气孔造成的。如果用针在大端刺一小孔,蛋加热时空气的针孔泄出,便可以防止蛋壳破裂。

3、在水中加些食盐,也可以防止蛋白溢出。因为溶化的食盐可以加速破裂处的凝结作用,并可以封闭裂缝。
