南京灌汤包的做法

主料:面粉1000克,温水600克,猪五花肉700克,肉皮冻280克,蟹肉160克,蟹黄,酱油各40克,猪油100克。

辅料:料酒6克,香油8克,白糖,葱花,姜末各5克,精盐15克,胡椒粉、味精各1克。

制作:

1、将面粉加水和匀揉透,放置片刻;

2、猪肉剁成肉茸,蟹肉剁碎,锅内加猪油烧热;

3、放入蟹肉、蟹黄、姜末煸出蟹油,与肉茸、皮冻、酱油、料酒等调拌成馅;

4、将面团搓成长条,揪成每50克4个的面坯,擀成圆皮,加馅捏成提褶包,上蒸笼用旺火蒸10分钟即可。
