做干锅需要什么食材

1、材料:仔公鸡1只1、水发香菇150g、冬笋100g、莴笋头150g、干红辣椒25g、老姜40g、葱100g、花椒10g、香辣干锅酱50g、啤酒250g、干锅底料250g菜籽油100g,精盐、料酒、鸡精、味精、胡椒粉、花生米、五香粉、白糖、猪筒骨汤、猪油等适量。

2、制作方法:鸡宰杀后去毛,去内脏,洗净斩成块放入沸水中氽去面沫,捞出沥干,干红辣椒切节,姜10g切片、30g拍破;葱50g切节、50g挽结,花生米入油锅炸香,香菇切片,冬笋切滚刀块,莴笋切滚刀块。鸡块用料酒15g、姜块15g和精盐1g拌匀腌渍20分钟,锅置旺火上掺入猪骨汤烧沸,放入鸡块加姜块15g,葱、五香粉、胡椒粉煮至鸡肉待七成熟捞出,鸡汤可作高汤备用。

3、炒锅置旺火上,掺入菜籽油烧至六成熟,放辣椒节呈棕红色捞出,放花椒炸香捞出待油温开至七成熟时,放入鸡块爆炒一会,再加香辣干锅酱,猪油和啤酒爆炒至鸡肉酥香,下辣椒节、花椒、鸡精、白糖和精盐等炒转,下香菇片、冬笋块和莴笋头块继续翻炒,当锅内收汁亮油时下葱花、花生米和味精炒转,转入不粘锅内,带酒精炉点小火上桌。
