腌五香鱼制作方法

1、食材:青鱼(或鲳鱼)500克、葱结、姜片适量,黄酒3匙,桂皮、茴香少许,酱油小半勺(约50克),白糖3匙半,麻油1匙,生油300克(实耗100克),五香粉半匙。

2、把鱼用斜刀法切成薄块,用一部分葱姜、黄酒、细盐,拌渍30分钟入味,然后用大火热油炸,至呈金黄色、口感硬脆时捞出。

3、原锅内留少量油,放葱姜、黄酒、桂皮、茴香、酱油、白糖及少量汤水(约50克)熬成稠厚有粘性的五香卤汁,淋上麻油,再把鱼块浸入卤中吸收滋味,再撒上五香粉即成。
