食材:桂花鱼一条、青辣椒丝适量、葱丝适量、盐适量、姜片适量、蒸鱼豉油适量、料酒适量、醋适量。

1、桂花鱼去鳞、腮及内脏,清净干净后置于碗中,背上剖花刀;

2、将鱼的两面和肚子抹少量盐,码上姜片,加入料酒和醋,腌渍5至10分钟;

3、把鱼摆入盘中,放入已上汽的蒸锅;

4、盖上锅盖,蒸10分钟左右开盖,撒上葱丝、辣椒丝,蒸2分钟;

5、将蒸好的鱼取出,淋上蒸鱼豉油即可。
