白酒发酵各过程温度范围如下:

1、入池水温不超过35摄氏度;

2、最佳发酵温度为25摄氏度至30摄氏度;超过30摄氏度者发酵期缩短;低于20摄氏度者,发酵期延长;

3、冬季生产可采用温水发酵;室温低于10℃者不发酵。

注意: 发酵开始后,每2至3天充分搅拌一次,以保证原料能发酵完全、彻底;发酵池或缸应加盖或用塑料薄膜盖上拴牢,需采用密封厌氧方法发酵。
