1、将姜和香葱分别切成末。将猪肉洗净,剁成肉茸,放入盆中,加酱油、味精、绵白糖、绍酒、姜末和葱末(15克)搅拌。过片刻,加清水150克继续搅拌,再放入搅好的猪皮冻末、芝麻油搅匀上劲,制成馅心。

2、将面粉(400克)放在案板上(其余作扑面),中间扒窝,加入200克40~60℃热水,将酵种撒碎放进,揉成面团,用双层布盖好。约2小时后,见面团膨胀发起,将中间扒开,倒进碱水,揉至面团光滑柔润,搓成长条,摘成面剂40只,在面剂上淋上花生油(25克),拌一下,逐只揿成直径6、7厘米的圆面皮,放在左手中,将馅心(20克)放入皮子中间,用右手拇、食指捏着面皮转捏折纹,收口后在顶部逐只沾上芝麻和葱末,成生包坯。

3、把平锅置炉火上烧热,倒入花生油(50克)滑光锅面,将包子由外向里逐圆摆满。然后,加清水约500克,盖上锅盖,焖至水分基本收干,揭去盖,倒入花生油(100克),加盖转动平锅,煎约2分钟,揭盖见包子鼓起,无水气,包底金黄光亮,即成。
