抄手皮加工制作方法

原料:

抄手皮500克,肥瘦猪肉末400克,生姜15克,鸡蛋1个,香油10克,化猪油20克,清汤100克,胡椒面1克,味精1克,盐25克。

制法:

1、猪肉末入盆加清汤、鸡蛋液、味精、胡椒面善汁水拌匀搅茸,形成馅心。用抄手皮包起馅心成“菱角”形;

2、盐、胡椒面、味精、酱油、化猪油、香油、葱花入碗,加入清汤;

3、煮抄手时应火旺、水宽、水开,煮至皮起皱纹发亮捞入碗内即成。
