按要求加拌的酒曲或酵母粉,在温度30的环境中根据个人对甜度的喜好,发酵时间在24至64小时。

冬季必须要保温,所有的酒发酵温应该在在20到28度以内。可以用电热毯、棉被、热水瓶等方法保温。白天和晚上的温差控制在3到5度以内。发酵初期就应该保温,三天内发酵罐内要有气泡破裂的响声和气泡上下窜动的现象表示发酵成功,否则发酵失败。
