酥炸粉保持长久脆度的做法如下:

材料:猪里肌排4片,干炸粉:1杯,玉米淀粉1杯,再来米粉二分之一杯,辣椒粉1大匙,蒜香粉2大匙,黑胡椒粗粒1大匙;辅料:葱2根,姜10公克,蒜仁40公克,水100㏄,洋葱粉1茶匙,香芹粉1茶匙,胡荽粉1茶匙,黑胡椒粉1大匙,细砂糖1大匙,盐1茶匙,料酒2大匙;将厚约1公分的猪里肌排用肉槌拍成厚约0.5公分的薄片,用刀把猪里肌排的肉筋切断;所有炸粉材料拌匀;所有腌料A放入果汁机中加入水打成汁,用滤网将渣渣滤除,再加入所有腌料B拌匀成腌汁,备用;取作法1猪里肌排放入作法2炸粉中,用手掌按压让炸粉沾紧,翻至另一面同样略按压后拿起轻轻抖掉多余的炸粉;将猪里肌排静置约1分钟让炸粉回潮;热油锅至油温约150度,放入猪里肌排以小火炸约2分钟,再改中火炸至表面呈金黄酥脆状后起锅即可。
