白条鸡的腌制方法和步骤

1、准备材料:白条鸡1只、盐(10斤鸡肉大约需要用6两盐)、花椒、桂皮、干辣椒适量;

2、把准备好的鸡杀好治净,再放入清水中浸泡4小时左右,沥水待用;

3、把盐、花椒、桂皮和干辣椒放在炒锅里,炒至香味四溢,盐的颜色微微变黄,关火放凉后再打成粉待用;

4、沥净水的鸡放在盆里,在鸡身内外均匀地撒上调味料,再用手反复地把调味料揉搓均匀;

5、搓好调味料的鸡码放在腌缸里,上面再用干净的石块等重物压上;

6、注意每隔一天或两天翻缸一次,腌制七天左右就可以取出来,挂在干燥通风处晾晒风干大约20到30天,收起来放在冰箱保存即可。
