原因如下:

1、面皮过硬粘性差;

2、馅料的油弄到面皮边上形成不粘层;

3、面皮背面的干粉过多;

4、面粉质量差,导至面粉中的面筋蛋白含量过低;

5、面团发酵不够,施碱后中和反应后,面团中的气体受热膨胀,不足以最大限度的撑开面皮;

6、施碱量过多,应待碱量适合后再做包子。
