猪油凝固与否主要与猪肉的不饱和脂肪酸含量高低有关。如果猪肉不饱和脂肪酸含量偏高,那么这种猪肉熬出来的油就不易凝固。在熬制过程中添加植物油,又或者熬制时间不够久不能令水分充分蒸发等也就不易凝固。

还有一种可能就是猪肉本身,冷冻肉和新鲜肉,肥肉和猪板油的材质不同也可能影响猪油的凝固状态。一般情况下,新鲜肉和猪板油熬制的猪油凝固得更结实。
