将面团在35摄氏度至40摄氏度的条件下醒发40分钟左右,至表面胀润、有光泽、体积明显增大、手按后易复原为止。夏季要放在室温下醒发,冬季放在垫有纱布的电饭锅蒸笼上醒发。当面已涨发时,要掌握好发酵的程度,如果切开面团后发现面团中已呈蜂窝状或有许多小孔,说明此时面团已经发酵好。蜂窝状面体的小孔越大,说明酵发得越老。所以将面团盖上湿布放到温暖处静置,直至体积变大,面中有大量小气泡时就代表醒发成功。
