控制油温不要过高,沥干木耳的水分。原因是油的沸点高于水,当油温达到100摄氏度以上时不会沸腾。油中加入少量水,水会沸腾,产生大量的蒸汽。水的密度大于油的密度,水会下沉,在油的内部沸腾。水由液态变为气态,体积膨胀,冲破油层。向油里加少许盐。原因是盐在油中不易溶解,成颗粒状在油的下面。当热油翻滚的时候,盐也动,把油的翻滚速度减小,并且可以使油受热均匀,减少迸溅。用熟油炒菜。原因是熟油炒菜时不用等油沸腾,即可放菜炒熟,减少油的迸溅。
