锅蒸馍的制作方法

原料:面粉、老酵面、白糖、蜜桂花汁、碱。

步骤:

1、准备食材;

2、将面粉、老酵面、白糖加入盆中,然后搅加入清水;

3、搅拌均匀,加盖发酵:夏天发酵时间为5小时,冬天发酵时间为12小时;

4、发酵至面粉成为醪糟味时,形成成新鲜酵面;

5、向新鲜酵面中加入面粉、白糖、蜜桂花汁,然后一边加水一边拌和揉匀;

6、加盖静置:至面团内起小蜂窝状有酸味;

7、按嫩发面投入适量碱:按5000克嫩发面加30克食碱的比例
