如何用虾熬汤

材料:布包豆腐3件,蟹肉,带子,鲜虾仁,斑肉,鲜草菇,白菌,菜远,红萝卜,蛋白1只量,生粉1汤匙,清水(或上汤)3杯,白酒1茶匙,胡椒粉,麻油,盐。

做法:

1、布包豆腐切骰仔形,用滚水浸热;白菌、菜远分别切指甲片大小,红萝卜切粒,鲜草菇去蒂切片;分别飞水;

2、带子、虾仁、斑腩分别用四分之一的调味料拌腌,飞水;蟹肉拣出蟹壳,用热水浸热;

3、白菌、鲜草菇、红萝卜、菜远用剩下的调味料加一茶匙盐煨至入味;

4、烧热镬,落油半汤匙,沾酒,加入豆腐、海鲜和菇、菜类,倒入清水(或汤)煲滚,用湿生粉埋芡,最后将搅匀的蛋白加入拌匀,落少许胡椒粉、麻油,盛于煲中即成。
