基本制作工艺是:选用新鲜肥羊,宰杀后配以青盐、芒硝、八角、桂皮、草果、花椒、小茴等调料,经制坯配料,卤制和上色等工序制成。腌肉时将羊肉皮面相对折叠排放在大缸内,添入井水,撒进青盐、芒硝,腌二到五天。

特点:羊肉除含丰富的蛋白质、脂肪外,还有味甘苦、性火热、开胃、增进食欲、补肾助阳的作用,是一种强壮食品。
