发酵时间久一点或者加热温度高一些可以避免面包烤成馒头。面包和馒头都是用酵母菌来发酵的。其区别只在于面团的配料不一样,加热的方式不一样。建议:使用干酵母,用30—40度左右的温水冲开,切勿用热水使酵母失去活性,接着打面时加入全蛋,使面包质地更加细腻,然后用纯牛奶代替水,使面包质地更加柔软,且营养更丰富,最后记住面粉须用烘焙专用的高筋粉。
