鸡翅膀卤前鸡要焯水,使皮质变紧,要小火慢炖,如果鸡上色均匀,用筷子轻易可以戳穿,就表示卤好了,关火。盖上盖子,让鸡再在卤水中泡15-30分钟后,用筷子夹出,凉了之后再斩成块即可。
