腊肉的制作方法

1、切条、腌制:将肉切成长30厘米,宽3至5厘米的条,用竹扦扎些小眼,用经过炒烫晾至温热的花椒和盐进行揉搓,搓后放入瓷盆,皮朝下肉朝上,一层层码放,最上一层用重物压住。每隔2天翻倒1次,腌10天后,改为每天翻倒1次,再腌4至5天,取出,用绳穿上,吊挂通风处晾至半干。烟熏:大铁锅内放锯末,上架铁箅子,把晾好的肉置其上,盖上锅盖,然后烧火。当锯末受热冒烟时停火,肉熏上黄色,其水分已干即成。蒸制、切片:把制好的腊肉放入温水泡软,刮去黄面,并用软刷刷去肉上的尘土,再用温水洗净,放入容器,上屉用旺火沸水足气蒸约1小时。下屉晾凉,切片装盘食用。

2、腌制方法同制作方法。肉腌好后,吊挂在屋外阳光下晒,开始每天晒1次,以后每隔2天晒1次,晒约2个月,即可成为色黄发干的腊肉。食用前的制作同制作方法一。
