碱面又名苏打、纯碱,即食用碱,英文名是dietaryalkali,主要成分是碳酸钠,化学式是Na2CO3,其质地较粗糙,碱面在传统面粉发面过程中常用于中和多余的酸性,此过程称为“揣碱”,碱的用量要适当,过少称为“碱小”,则面死而发酸;过多称为“碱大”,则开花而色黄。
