炒鸭子去掉腥味的步骤如下:

1、宰杀的鸭子得放入水中侵泡2-3个小时;

2、要用水焯一下,把浮沫打掉;

3、在炒鸭子之前,将剁好的鸭肉放调料事先煨一个小时,调料包括:料酒、白糖、炸熟的花椒粒、姜末、葱粒,将鸭肉浸在调料水中;

4、炒的时候放入一些黄酒,腥味就可以去掉了。
