周黑鸭的制作流程与配方

主料:鸭脖子。

配料:葱适量、香料适量、酱油适量、老抽适量、料酒适量、冰糖适量。

方法步骤如下:

鸭脖洗净,去掉表面的筋膜。提前焯一下水,去除血水和杂质,捞出冲洗干净,沥干水分。葱切段姜切片,各种香料冲洗干净,晾一下水分。起油锅,爆香所有的香料。加酱油、老抽和料酒,添加适量水和老卤,加冰糖,煮开。添加鸭脖煮开,添加适量盐调味,转中火炖煮30分。关火,充分浸泡。吃之前,捞出沥干,铺在烤盘内200度上下火烤20分钟左右即可。用过的卤汁过滤下收在冰箱里下次再用。
