泡椒火锅制作底料的方法:

用料:牛油20斤、菜子油30斤、鸡油10斤、豆瓣酱10斤、豆豉2、5斤、粗辣椒面10斤、姜拍碎15斤、高度白酒1斤、葱切段10斤、蒜拍碎10斤、泡椒10斤、大料1斤、花椒8斤、小茴香半斤、甘草切碎2两、肉桂2两、丁香2两、肉豆蔻5两、桂皮5两。

做法:

1、先将炒锅置旺火上,下牛油;

2、鸡油烧8成热后,加姜葱蒜靠干后捞出;

3、加炸过花椒的色拉油,加8成热后豆瓣、扁干后加剁好的干花椒面;

4、煸出香味
