冬天青菜变甜,是青菜自身适应环境变化、防止冻害的现象。由于青菜的植株内淀粉变成葡萄糖溶解于水,细胞液中增加了糖份,细胞液就不容易破坏,青菜也就不容易被霜打坏。

青菜里含有淀粉,淀粉不甜,且不容易溶于水。但霜降后,青菜里的淀粉在植株内淀粉酶的作用下,由水解作用变成麦芽糖酶,又经过麦芽糖的作用,变成葡萄糖。葡萄糖很容易溶解在水中,并且葡萄糖是甜的,所以青菜就变甜了。
