1、老火汤味道浓,炖汤比较清淡。

2、老火汤,大火把水烧开,然后用慢火持续加热,它的汤水会持续翻滚沸腾,汤水是弄的,看不见底,熬出来的肉油脂是散的,讲究味道浓郁。

3、炖汤,有蒸汽炖和隔水炖两种。炖汤是利用蒸汽或者沸水传递热量,因为温度相比直接用火或者电加热要低,所以炖盅内的汤水不会剧烈沸腾,但温度会持续保持100度加热。正因为不剧烈沸腾,所以汤水是清澈见底的,而且刚揭盖的汤,表面有一圈一圈的动物油,不散乱。另外蒸汽炖比隔水炖要快很多。
