1、面粉遇水以后产生褐变主要是因为含有淀粉等成份,淀粉转化成糖的过程中遇到不同温湿度就会产发黑、发红等现象。所以面条要风干才能加长保存期;

2、面条中的小麦含有胶体复合蛋白和淀粉,面条浸水发胀后搓揉,洗净了淀粉,胶体复合蛋白残留在面团上,加之手有一定的污垢,会导致面团发黑,属于正常现象。
