葡萄酒一般都需要进行过滤。酒精发酵结束后,酒液中的皮渣对于葡萄酒来说已经没有任何用处,如果不过滤掉,相反还会增加酒中的沉淀物,影响口感。另外皮渣中可能含有其他的微生物,长期浸泡可能也会影响葡萄酒的稳定性,不利于长期保存。葡萄酒经过发酵后,死亡的酵母在底部沉淀,形成酵母泥,澄清后,还是需要过滤,才能达到澄清透明。
