涮毛肚制作方法:

食材:

麻将、酱豆腐、韭菜花、卤虾酱、酱油、盐、料酒、黄牛毛肚、青蒜苗、葱白、牛肝、牛腰、牛脊髓、醪糟汁、背柳肉150克、鲜菜500克、干辣椒、姜片、豆豉各40克、料酒15克、花椒、精盐各10克、豆瓣125克、鸡蛋清6个、味精、香油各2克,牛肉汤2500克,牛肉200克

制作步骤:

1、毛肚切3厘米宽片,凉开水漂洗,牛肝、牛腰、牛肉切成薄片。葱和蒜苗切成8厘米长段,鲜菜撕成长片;

2、牛油75克烧至六成熟,放豆瓣炒酥,加姜末、辣椒、花椒炒香,加牛肉汤烧沸,放料酒、豆豉,醪糟汁烧沸成火锅卤;

3、脊髓、毛肚、肝、腰、牛肉及其青蒜苗、葱段、鲜菜、精盐、牛肉分别盛入小盘,荤素原料随吃随烫,根据汤味浓淡加入精盐和牛油,香油加味精调料供醮食用即可。
