博山烧肉的做法和配方

1、原料配方:猪肉适量、盐适量、花椒皮适量;

2、将活猪(60公斤重的为宜)宰杀,热水退毛、劈半,带皮放在阴凉透风处晾干,然后进行剔骨,割掉四腿和肚底,扒掉板油,切成长30厘米、宽5厘米的肉条,放入盐、花椒皮,加水浸泡40分钟左右取出。

3、再用烤肉钩将每块肉挂起晾4~5小时后进入烤炉用无烟果木本,如苹果木、柿子木、软枣木、枣木、香椿木、花椒木等熏烤(严禁用烟木和有腥味的木头),熏烤时间为3.5~4小时,即成。
