1、切块前先将肉拍松。将排骨用刀背将两面拍松,这样可使纤维组织之间有 缝隙,烧煮时易熟入味快。

2、剁成均匀的小块。刀工处理排骨时,剁小一点的块比较容易熟、入味快 ;同时剁成的块要大小一致,这样才能够受热均匀,入味均匀。

3、酱油浸泡1小时。烧菜往往比炖菜加热时间短,不易入味。如果提前用酱油 将排骨腌渍1小时,烧熟后就能咸鲜适口了。
