自制水果酵素需要发酵6个月以上即可食用,酵素的发酵温度为20度到32度为宜,过低会暂停发酵,超过35度,会抑制酵母菌生长,47度以上就会陆续死亡,最佳发酵温度是25-30度间,因为温度越高,发酵过度剧烈,反而不利。

在发酵过程中尽量噬尽残糖,选择5层-9层的保鲜膜过程中,要视乎水果种类的发酵剧烈程度而定,容易发酵的水果用厚一点,难发酵的则用薄一点,最终糖度为0的酵素是最适合糖尿病人服用的。
