原因:

蔬菜在生长过程中大量使用含硝酸盐化肥,硝酸盐在蔬菜中蓄积,使许多蔬菜里如菠菜、芹菜、大白菜、小白菜、萝卜叶、荠菜等都含有硝酸盐、亚硝酸盐。

剩饭菜放置时间过长,因细菌作用也产生亚硝酸盐。

青菜经加工存放24小时后,亚硝酸盐有所升高,到48小时起明显高于起始水平,所以剩菜越回锅越咸。
