酱骨鸡的做法

材料:童子鸡750克、淀粉3克、冬笋50克、盐3克、小葱5克、味精2克、黄酒10克、酱油20克、猪油40克、白砂糖30克。

做法:

1、将嫩光鸡剖肚去内脏,洗净,斩去头脚,将鸡肉斩成4、9 厘米长、4 厘米宽的鸡块;

2、 生笋切成滚料块,炒锅置旺火上烧热,经滑油后,放入熟猪油25 克,烧到七成热时,放入鸡块,煸炒到外皮紧缩变色,下入绍酒、酱油、白糖稍烧一会儿,使鸡肉上色;

3、再加入肉清汤烧开,加盖,用小火烧十分钟左右,再放入笋块直烧到鸡酥、笋熟后,下入味精、精盐用旺火收汁,用湿淀粉勾芡;

4、加入熟猪油25克,颠翻几下,再淋上熟猪油10克,撒上葱段即可。
