1、盐水腌蛋, 腌制时先将食盐溶于开水,以呈饱和状态为度(就是盐水有点咸苦)。待盐水冷却,将洗净晾干的鸡蛋,一只只地放入盐水中,并在盐水中倒入白酒一小盅,密封坛口, 30天左右即可开坛取出煮食。此法腌制咸蛋,简单快捷,蛋黄出油多,特别香浓好吃。

2、白酒浸腌蛋,浸腌时先将洗净晾干的鸡蛋放在白酒中逐个浸蘸一下,再滚上精盐,放入容器内,约30天即成。这种方法最简便。

3、五香味蛋 取适量的花椒、五香八角、大蒜子,生姜、精盐,等量放于水中煮沸20分钟,倒入瓷坛内。然后将洗净的鸡蛋泡入,封严坛口,40天后即成。这种腌鸭蛋,香味浓郁,微咸可口。
