盘丝花卷的做法

材料:自发粉400g、发酵粉5g、油适量、盐适量、葱适量肉10g、酱油适量、辣椒粉适量。

盘丝花卷的做法如下:

1、400g的自发粉,35度的水温,5-6斤面粉,用一小包发酵粉,一包12g,将发酵粉倒入35度的水温中调匀,慢慢的加入面粉中和匀面粉;

2、将面团揉成光滑的团,放入大碗中,盖上湿布,醒上40分钟,等醒成蜂窝状,在次揉面粉,盖上湿布醒30分钟;

3、将醒好的面团搓揉均匀,触摸上去柔软,有弹性即可;

4、葱花,辣椒粉,料酒,酱油,辣椒油适量,调制成馅;

5、将面团揪成一个个小团,摊开,拉成长条状,在抹上拌好的调料,卷成小卷,稍加挤压即可;

6、将面团摊开,压成小圆饼状,填入肉馅,包成团即可,糖包的方法和肉包一样,包住馅即可;

7、上锅隔水蒸上20分钟即可。
