砂锅煲全鸡做法

主料:仔母鸡一只。

配料:熟火腿,熟猪心片,熟猪舌片,熟冬笋,白蘑菇,豆腐,鲜汤,川盐,料酒,味精,胡椒粉,葱,姜,豌豆尖苞。

1、活鸡宰杀去毛及内脏,清水洗净,放入煮锅内除去血水,盛在大碗内;

2、葱切段,姜切片,和川盐一起放入鸡碗内,倒入鲜汤,上笼蒸烂;

3、火腿、猪心片、猪舌片、冬笋均切成五厘米长,三厘米宽的片;

4、自蘑菇用水泡胀,洗净,片成片,泡蘑菇的水留用;

5、豆腐切成四厘米长、二厘米见方的条;

6、锅内烧水五百克,加入川盐二克,把豆腐条放入锅内焯一下捞起,放在温水中漂起;

7、锅洗净,倒入鲜汤,把火腿、猪心片、猪舌片、冬笋、葱段、姜片、川盐、料酒、胡椒粉和白蘑菇水放入锅内烧三十分钟;

8、上菜时先放入白蘑菇片在锅内烧二分钟,再放豆腐条,拣去葱段、姜片;

9、从笼中取出全鸡,放在大盘子中,把汁浇入锅内,再放入味精搅转,加少许豌豆尖苞即可。
