铁板香豆腐的制作方法

材料:

300g豆腐、20g油、5g盐、2g味素、5g自制鲜辣粉、500ml高汤;

步骤:

将白豆腐放在冷藏室冷藏24小时;倒去水分,用快刀快速将豆腐片成7mm厚度的薄片;将多余边角修整齐,豆腐切成5cm见方的小块;将豆腐用清水清洗杂沫,浸泡在加入盐、味素的高汤中12小时;用消过毒的竹签小心的将豆腐串起来;将平底锅烧热,将所有的油加入下豆腐串,大火煎制2分钟;将多余的油倒出,中火慢慢烤制,直至豆腐两面金黄;撒鲜辣粉,两面各烤15秒,起锅即可。
