先将糯米放入大水缸中浸透,淘净,然后捞起滤干,倒入大饭甑里蒸熟成饭。复将饭甑移到大陶钵上,淋半桶清凉水,促饭降温,然后将甑中之饭盛入酒缸,俟温度降至20度左右时,则均匀地拌入酒饼(一种发酵的酵母,系用米糠、中药细辛等制成),旋即反复搅拌,接着把饭扒平,从饭的中央挖一小井,盖好缸盖,移放到放有稻草的竹篓里,以利于保温发酵。夏天气温高,24小时后,启开缸盖,小井中即涌出香气四溢的酒液,谓之酒娘。继用杓子翻动酒娘糟,再盖上缸盖,但不宜盖得过紧,须留一气孔出气,否则酒易变酸。4~5天后,注入醴泉水约300斤,浸泡酒娘槽;又4~5天后,把酒糟倒入酒篓里,压榨出酒液来。然后,把酒液装入酒坛,密封坛口,送入温室用蒸汽局沸。这便是当时市肆中出售的黄酒了。家酿黄酒的工艺与上述同,只不过数量较少,罕有一次即酿4~6斗糯米的。此外,作坊(即酒店)酿酒均由男人做师傅,而家庭酿酒则多由妇女操作。
